Shell fish fry in black bean sauce is one of the typical way of cooking of shell fish in sea side of Chinese culture. I used to eat this dish so often when I was in Hong Kong. To be honest the clams in Singapore is not really the best but it was a great sauce.
I made slightly different than the original cooking way. Boiled potato and the slightly steamed cabbage was absolutely delicious to have them together.
「貝の豆豉炒め」香港料理のあさりの豆豉炒めの様な料理を作ってみた。本来は茹でた貝を豆豉で炒めるものだが、よく貝を塩に漬けておいたので、豆豉と紹興酒で蒸しあげた。貝の出汁が出たソースで茹でたじゃがいもとキャベツをまとわせた。とても美味しくできた。
