Kohada

 Kohada is one of the popular sushi toppings which is marinated small Konoshiro fish.  It takes time to fillet small fish to salt then vinegar but the outcome is wonderful.

「小肌」１２月の料理。小肌を仕込んでみた。残りは寿司ネタ。最近はYoutubeに寿司ネタの仕込みの仕方が載っているので簡単にできるようになった。少し面倒だが２、３尾やると慣れて速くできる。
