Bamboo with pork

It might look like a simple vegetable stir fry dish but it requires a lot of techniques to make Chinese dish really good.  This is thinly sliced boiled bamboo with thinly cut pork fillet cooked in white sauce.

I pre boiled bamboo in chicken stock to remove the packaged smell.  Then marinate the sliced pork in  Chinese wine, salt, sugar and potato starch.  Then cooked the meat in low heat oil until it cooked about 90%.  Pour the oil back to the oil reserve then start sautéing minced ginger with bamboo, then add back the meat and seasoned with Chinese wine, pork stock, salt and light soya sauce.
