"Harusame" means "
Glass noodle" in Japanese. They are cooked in stock from dried shitake mushrooms and dried scallops. It's important to make a good stock to cook this noodle so that the noodle soak up the taste of the stock fully. I also added lightly marinated chicken with it.
「春雨の広東風煮込み」乾燥椎茸と乾燥帆立からしっかり出しをとって煮込んだ春雨。鶏肉はささみを棒切りにして軽く塩、砂糖、酒、片栗粉に漬けこんだもの。最後に全体にとろみをつけて仕上げる。
