Yuba which is a protein from Tofu is one of the famous delicacies of Kyoto. We went to the fusion restaurant that specializes in Yuba. I've found that all the dishes are very light and delightful.
「ゆば泉」湯葉専門のレストラン。カジュアルな所で地元の方に人気だそうだ。湯葉を和食と洋食を融合した料理に使っていて斬新だった。メインの材料が湯葉なので軽くて美味しかった。京都にしかない店だと思う。
