Must buys in Hong Kong
I've realized that Chinese cuisine culture between Hong Kong and Singapore has a big difference. Of course it's a different region but 75% of population in Singapore are Chinese descendants, they're mainly from Fujian, so Chinese cooking culture is also different from Hong Kong.
In order to make proper Cantonese I needed to have a good bamboo steamer to famouse hand craft shop in Sheung Wang. This is something you should buy in Hong Kong because it's the best. Soya sauce is also better in Hong Kong. Other spices I can probably find in Singapore as well.
「香港で買うべき物」香港からシンガポールに移住する際、シンガポールも華人が人口の75%を占めるので、中華の食材や調理器具には不自由しないと思っていた。しかし、実際、シンガポールは主に福建省出身の華人が多く、香港(広東)とはかなりの違いがある事に気が付いた。
広東料理は蒸す料理が多いが、こちらは炒め物が多い。プロ用の調理器具屋を回ったが、良い蒸籠を見つけられなかった。上環にある「徳昌森記」蒸籠店に蒸籠を買いに行った。その他、防腐剤や人口着色不使用の老舗の中華醤油「九龍醤油」の醤油を買った。唐辛子と山椒は四川料理用。
