I've found this recipe in Italian cooking book. This is a dish of thinly sliced fish grilled on a plate. I made it on casserole but it was easy and wonderful dish. I think it works as any white fish but I used large key fish this time.
Tomato sauce has to be prepared separately. Once the fish is cooked in the oven, which only takes about ten minuets, arranged the sauce on the top and serve it.
「白身魚の皿焼き」これは辻調理学校の教本のレシピ。皿に敷いた鯛のそぎ切りをオーブンの上火で焼いたものに、トマトソースをかけたもの。簡単で感激の美味しさだった。
トマトソースは別に手作りする。今回私はニンニクと生姜のみじん切りをたっぷり入れたオリジナルのソースを作ってみた。魚は鮮度が良ければ、炙る程度でも良さそうだ。魚のそぎ切りは、上手に魚を下ろせなくてもできるし、骨もとって作るので食べやすくていい。
