Dongpo pork takes a lot of time; about three hours to make it well. It's important to use the pork belly with skin. I also used Chinese soya sauce so the color became very dark. This dish can be kept frozen. I often froze them and use it when I'm busy to cook. Other dishes on this day were; Japanse potato salad with cabbage, fried fish with sweet sour sauce, miso soup.
「東坡肉」はじめにじっくり1時間半茹でて味付けするので全行程で3時間以上かかるように思う。冷凍していても美味しく頂ける料理なので、半分は冷凍して忙しい時に使う保存料理にする。味付け材料は氷砂糖、紹興酒、醤油、中華醤油。少し甘めが良いと思うが、自分流の甘辛味に調節している。この日の料理は残り物も合わせて、ポテトサラダ、魚の竜田揚げの甘酢かけ。
