Salt chicken is salt marinated chicken cooked in water. I sometimes marinate chicken legs in light salt for one day then cook in water with vegetables. This makes really nice soup. It's important to marinate legs with a good amount of salt, not too salty but just right.
「塩漬け鶏とキャベツの煮込み」鶏の脚を1日強塩漬けして水と香味野菜(玉ねぎ、人参、セロリ)などで柔らかくなるまで煮込むもの。これは私が時々する保存料理。色々転用できるので便利だ。今回は煮込んだ鶏を仕上げにベーコンとキャベツを入れた。キャベツは煮込みすぎると美味しくないので、最後に入れる。
