I strongly recommend a flag shop of Ajisen Ramen to eat "Taipien" not ramen itself. Taipien is a noodle soup that is original in Kumamoto which uses glass noodle instead of regular flour noodle and it has tons of vegetables on the top. I also recommend taking a plate of gyoza there.
「味千ラーメン本店」熊本が世界に誇る企業「味千ラーメン」の本店が熊本県庁近くにあるのだが、この店の太平燕がおすすめ。スープがさらっとし過ぎず、こくがあって美味しいし、野菜もたっぷり入っていて食べ応えがある。餃子もかなり美味しい。
