Satoimo yam cooked in Konbu


I bought Satoimo yam in Meidiya.  This type of yam exist in local market but Japanese one is much more stickier.  I cooked yam with Konbu stock with Japanese light soya sauce and mirin.  I also added Age and cooked it until it became very tender.

「里芋と揚げのトロトロ煮」明治屋で買った日本の里芋がとても良質だった。昆布だし、薄口醤油、塩、少量のみりんの薄めの味付けでトロトロに炊いた。箸がすっと入るくらいの柔らかさだ。きめの細い稲荷揚げを一緒に炊いたが、出汁をたっぷり吸って相性がとてもよかった。
