White snapper is large snapper and very reasonably price in Singapore. I think that Chinese people generally like pomfret over this fish but I like it very much because it's tasty and makes great stock.
I took fish stock out of snapper head and bones then mixed with parsley sauce which I have usually keep home made in my fridge. I went very well with pasta with asparagus.
「ホワイトスナッパーのグリーンパスタ添え」ホワイトスナッパーは大きいのでさばきやすい。さっぱりした鯛で、料理しやすく私はとても好きだが、中華系の人には身がパサパサしていると思われているようであまり人気がない。
頭と骨でフォンをとって作り置きのパセリソースと合わせてパスタにあえた。とても作りやすくて美味しかった。
