Threadfin with almonds

This is fillet of threadfin casted with almond slices.  "Trout with almonds" is one of the famous French fish dish and I tried it with local fish this time.  It turned out that it was as good as with trout.

「ツバメコノシロのアーモンドソテー」これはフレンチ有名な魚料理「ニジマスのアーモンドソテー」の地元魚版。ツバメコノシロの身は川魚に近い感じなので、アーモンドの衣のソテーを作った。アーモンドのこんがりと焦げた香りが魚と良く合う。バターでソテーするものだが、私は最初はオリーブオイルを使い、最後に小さじ１くらいのバターを溶かして上からかけた。
