Cutlet Milanese


 Veal cutlet is something we really love.  I tend to make this whenever I find veal in the nearby shop.  Somehow the meat had contained some water that I should have removed because after frying the cutlet the juice came out to soften the crust.

「カツレツ・ミラネーズ」近くの肉屋に仔牛のスカロップがあるとよく作る料理。何度食べても美味しい飽きがこない料理だ。今回は肉に水分が多く(冷凍を解凍された故だと思う)、揚げた後に肉汁が出てきて衣が柔らかくなってしまったのでオーブンに少し入れて仕上げた。
