Originally, I wanted to make French style of chicken liver terrine but it fell apart after baking so I arranged green onions later for the presentation. The taste of the chicken liver was good but this is not what I intended to make at first.
「鶏レバーのネギ和え」実は鶏レバーのテリーヌを作ろうと型に入れて焼いていたのだが、型から出したら崩壊した。フォアグラのようにねっとりと脂肪が多い訳ではないのでそうなるといえば当然だ。攪拌してから作るべきだった。
そのままサラダのトッピングなどにしても良かったが、ネギと七味を沢山ふって和風のおかずにしてしまった。味付けは赤ワイン、コニャックなどが入っているが。。
