I love salad with lots of toppings. The leftover of roasted chicken is one of my favourites. I made a dressing with "Shiokoji" which is fermented rice which makes sake. It makes somewhat creamy dressing without adding mayonnaise.
「チキンサラダ・塩麹ドレッシング」塩麹に白だしを少し入れてオリーブオイルで乳化せたもの。味が少し濃いので水で薄めるとよい。クリーミーな和風レッシング。
