Shimeji mushroom was on sale so I bought three packages of them to make condiments for rice. I minced them in the food processor with some garlic and chilli. The reason I minced them as such is to reduce the slimy texture of the mushroom... well it doesn't' technically reduce its special texture but it tastes better for me this way.
I cook them in the sauce with soya sauce, mirin, sake and sugar with olive oil and cook them until the liquid disappears.
「しめじの醤油煮」占地が安くなっていたので、3袋買い、ご飯の友の醤油煮にした。私は占地はヌメヌメした食感があまり好きではなく、箸から滑る感じが嫌なので、フードプロセッサーで細かくした。これでぬめりが取れる訳ではないが、少しマシになる。
少量の油で炒めて醤油、酒、みりん、少量の砂糖で味付けした。この醤油煮はご飯、豆腐、うどんなどに合う。
