Nayaki means leaf vegetable with bean curd cooked together in dashi and sake. This is one of the traditional vegetable dishes in Kumamoto. I made this with Chinese leaf vegetables and it was better than Japanese Komatsuna.
「菜焼き」なやきとは熊本の郷土料理だと思うのだが、簡単に言うと小松菜と油揚げをいりこ、白だし、酒でさっと炊いたもの。給食や地元のお惣菜屋にはよくある小鉢料理。今回は中華レタスで作ってみたが、小松菜より美味しくできた。
