Petit farcis nicois


This is a very known dish from Nice but I've started to make different from the original way lately.  This is usually made with minced pork or veal with ham but I make it with beef with vegetables that I scraped out.

First, I scraped out insides from tomatoes and aubergines then sauteed them with garlic, shallots in olive oil.  Then put the content back to the vegetable cups and cook in the oven until everything cooks.

「ニース風のファルシ」最近この料理を作るときは詰め物を肉だけでなく、くり抜いた野菜をニンニクと玉ねぎと一緒に炒めてくり抜いた野菜に詰め直す。詰め物の方が多くなって余ってしまうのだが、軽く出来る。
