Rouget Poele

 

I don't think that this fish is mullet but since I cannot find its' name refer to the fish that is similar.  This fish is very tasty when it's deep-fried with flour.  

「ルジェのポワレ」この魚の名前は分からない。イトヨリとアマダイの間のような魚で、地中海の"Rouget"という魚に似ているのでこの魚で美味しい料理法で作ってみた。これは薄力粉をまぶしてじっくり油でソテーしたもの。

この魚は身は柔らかいのだが、骨から旨味がしっかり出てとても美味しい。レモンをたっぷり絞って頂いた。
