La Balette
We come to this one Michelin star restaurant each time we visit this place. This is one of our favourite place in the region and I came here three years ago with my sister the last time. Since then it was some surprising changes. I've found all the dishes became much better with details.
I was very impressed with the starter sardine dish which is the signature dish of this region. The sauce was sweet onion confit that was an amazing combination with filet of sardine. The main dish was absolutely amazing with crispy fish skin and sea fragrant sauce. All the garnitures were prepared extremely well with great details;
Mostly, we all were astonished by the chocolate dessert. It was a mousse au chocolat filled a chocolate cup with crunchy bits on the middle... in short but it was much more than that.
「La Balette」コリオウーの1つ星レストラン。過去に何回も来ていて、3年前にも訪れたが、今回は前回より良くなっていた。前回より料理のプレゼンテーションが良くなったと思し、料理自体もとても丁寧で美味しかった。
この街はアンチョビが特産品なのだが、前菜のイワシのフィレがとても美味しかった。もう一つは魚介の濃厚ソース。エビやカニの出汁にクリームを加えたものだと思う。メインの魚は素晴らしく料理されていた。皮がクリスピーで完璧な火の入れ方だ。付け野菜の料理の丁寧さには驚いた。
何よりチョコレートのデザートがとても美味しかった。前回来た時のデザートも美味しかった思い出があるが、シェフFrederic Bacquieはチョコレートデザートがものすごく上手だ。お料理は全体的にしっかり目の味付けだが、きちんとした味でバランスが良くとても美味しかった。地方の1つ星は材料の質がとても高いのでパリよりおすすめ。
