It's a delight to make a sauce with fresh shrimp because the shrimps are so fresh in Singapore. I prepared tomato sauce with the stock of shrimp and cooked the shrimp meat lightly in the sauce.
「海老のペスカトーレ」シンガポールの海老は生で新鮮なので、頭で出汁をとり、トマトソースと合わせた。最後にそのソースで海老に火を通せばプリプリの海老のペスカトーレソースができる。
