I like this fish because it's very reasonable and very tasty. This fish is a kind of red snapper so it's similar in taste but it's much moister. The sauce is made with a stock with fish bones with butter.
「キーフィッシュのネギソース」この魚はシンガポールでは一般的で安価な魚だがとても美味しい。鯛の種類で白身の魚だが身がしっとりとしていて旨味がある。ソースは頭と骨からとったフォンに少量のバターを入れて乳化させたものにネギとレモン。
