Fish Head Rice



The fish head is a delicious part of fish.  This is something that only a small number of the culture of the world knows it.  Japanese of course which I believe that the culture which knows how to appreciate fish the best in the world.  Here in Singapore, "Fish head curry" is one of the most popular dishes that people appreciate it.

The fish head is tasty because it's a structure made full of calcium, gelatins and proteins.  Though it can be smelly so it's good to roast it in the oven with a good amount of salt.  

Once the head and the bones are fully cooked and dried, I place them in a clay pot of rice. The fish bones give absolutely wonderful taste and the flavour to the rice.

「カブト飯」キーフィッシュの頭と骨をオーブンで焼いたものを入れて炊いたご飯。魚の頭というのは特に鯛類の魚だとものすごくよい出汁がとれる。それは先ず焼く事が大事で、塩が馴染んだらオーブンでじっくり焼く。

塩、酒、薄口醤油を少量加えてご飯(ムギ入り)を炊いた。頂く時は頭も骨も取り除いてよそった。
