Red Snapper in Singapore is a great fish but I believe this is farm-grown so it's slightly rich in taste. I've tried "Ichiyabochi" which is overnight dried fish in the fridge. It's usually made in cold weather outside but I put in the fridge without plastic over.
In this method, it removes excess water from the fish and concentrates its' taste. I pan-fried it to serve it. Traditionally, it's grilled or cooked directly on the gas. This type of cooking of the fish is great to have with white rice.
「レッドスナッパーの一夜干し」この魚はクセがなくプリッとした鯛。割と大きな魚なのでソテーすると美味しい。ただ養殖だと思うので、身が少し脂っぽい。軽く塩をして冷蔵庫干しをしてみた。
最後はフライパンで焼いたが、本当は網焼きしたらもっと美味しかったかと思う。魚の旨味が凝縮されて白ごはんにとても合う。
