This is a Chinese way of stir fry dish of a combination of squid, string beans, stem vegetable and green onion. It would be better if I had celery. Squid is difficult seafood to cook well because it tends to be hard when you overcook it.
I also cut the squid in decoration wich is to add half a knife into the squid in diagonal every 2 mm. This way of cut turns in to fringe once you lightly boil it. After lightly cook vegetables and the squid in boiling water, stir fry all together in a wok and seasoned with salt, sugar, Chinese stock, Chinese wine and sesame oil.
「烏賊の中華炒め」これは烏賊を飾り切りして塩炒めしたもの。烏賊は固くなりやすいのでとても難しい食材だと思う。烏賊はヤリイカ。飾り切りは中華の料理Youtubeを参考にしたが、思ったように上手にできていない。
野菜はインゲン、茎の野菜、ネギだが、セロリがあったら香りがあって良かったと思う。一旦野菜も烏賊も茹でて油で炒めた。味付けは塩、砂糖、中華だし、酒、ごま油。最後は水溶き片栗粉。
