Kerala chicken curry

Kerala is a city in the South of India.  Kerala curry is a typical South Indian curry based on coconut milk.  My Indian curry is made with a very small amount of Chili so the colour of the curry lacks redness.

It's important to make curry with fresh spices.  Indian spices lose its fragrance when it's not fresh and if you don't cook Indian food often your spices can be quite old.  I usually buy the spices from Tekka market when I cook Indian dishes but haven't been there for a long while due to Corona lockdown.

「ケララ・カレー」ケララとは南インドの都市の名前で、南インドカレーを一般的にケララカレーと言うような気がする。南インド料理は北インドよりも軽く、最近日本でも流行っているが、ココナッツミルクを使うものが多い。

我が家は夫が辛いものが苦手なので、カレーを作る時もチリの量をかなり減らしている。なので、かなり赤色が入っていないので色が悪い仕上がりになってしまう。
